Thai Turkey Balls

Serves 2

Ingredients

  • 250g lean turkey mince
  • 1 clove garlic, crushed
  • ½ cm ginger, grated
  • 4 tbsp ground flaxseed
  • 1 spring onion, chopped
  • 1 zucchini, grated
  • Pinch chilli
  • 2 tbsp coriander
  • 1 tbsp fresh lemon juice

Method

  1. Combine all ingredients in a bowl until well mixed.
  2. Roll mixture into balls (about 2 tbsp. per ball) and allow to set in fridge for 30 minutes.
  3. Preheat oven to 180ºC and line a baking tray.
  4. Bake in the oven for about 10 minutes, rotate the balls and cook for another 10 minutes or until cooked through.
  5. Serve with a side salad.
