Zucchini Breakfast Muffins

Serves 3

Ingredients

  • 2 zucchinis, grated
  • 1 small sweet potato, grated
  • 6 eggs
  • ¼ cup parsley, chopped
  • ½ cup cheese, grated
  • ½ cup cashews, chopped
  • Pinch sea salt
  • ¼ cup water
  • ¼ cup ground flaxseed

Method

  1. Preheat oven to 180ºC and grease a muffin tin.
  2. Whisk the eggs and water together, then mix through the remaining ingredients until well combined.
  3. Pour mixture evenly between muffin cups and place tray in the oven.
  4. Bake for 25-30 minutes or until cooked through.
