Avocado and Egg Breakfast With Lime
Serves 1

Ingredients
- 2 free range or organic eggs
 - ½ avocado, pitted, peeled and sliced
 - 1 chopped tomato or handful of cherry tomatoes
 - 1 tbsp fresh lime juice
 - 1 tbsp chopped coriander
 - Sea salt and cracked black pepper to taste
 
Method
- Fry eggs in a non-stick pan over medium-high heat until it has reached your desired consistency.
 - Transfer eggs to plate with avocado and tomato.
 - Drizzle with lime juice and top with coriander.
