Avocado and Egg Breakfast With Lime

Serves 1


  • 2 free range or organic eggs
  • ½ avocado, pitted, peeled and sliced
  • 1 chopped tomato or handful of cherry tomatoes
  • 1 tbsp fresh lime juice
  • 1 tbsp chopped coriander
  • Sea salt and cracked black pepper to taste


  1. Fry eggs in a non-stick pan over medium-high heat until it has reached your desired consistency.
  2. Transfer eggs to plate with avocado and tomato.
  3. Drizzle with lime juice and top with coriander.
  4. Season with salt and pepper, as desired.
