Baked Garlic Mushroom Eggs

Serves 1


  • 8 button mushrooms, thinly sliced
  • 1 garlic clove, crushed
  • 40g fetta, chopped
  • Handful baby spinach
  • Cracked pepper and sea salt to taste
  • 2 eggs, beaten


  1. Preheat oven or grill to 180ÂșC and grease a ramekin.
  2. Mix the mushrooms, garlic, fetta and spinach with the eggs, and pour into the ramekin.
  3. Leave in the oven for about 15 minutes, or until cooked through.
