Baked Garlic Mushroom Eggs
- 8 button mushrooms, thinly sliced
- 1 garlic clove, crushed
- 40g fetta, chopped
- Handful baby spinach
- Cracked pepper and sea salt to taste
- 2 eggs, beaten
- Preheat oven or grill to 180ºC and grease a ramekin.
- Mix the mushrooms, garlic, fetta and spinach with the eggs, and pour into the ramekin.
- Leave in the oven for about 15 minutes, or until cooked through.
