Carrot Cake Oatmeal

Serves 1

Ingredients

  • ½ cup oats
  • 1 tbsp chia seeds
  • 2 tbsp crushed walnuts
  • ½ carrot, grated
  • ½ apple, cored and grated
  • Pinch cinnamon
  • Pinch nutmeg
  • 2 tsp sultanas, chopped
  • ⅓ cup almond milk

Method

  1. Mix all ingredients together and transfer to a bowl or mason jar.
  2. Refrigerate for 2 hours, or overnight.
  3. Serve by itself or top with some coconut yoghurt.
