Eggs On Sweet Potato Toast

Serves 1


  • 1 large sweet potato
  • 2 eggs
  • Fresh herbs of choice


  1. Cut the sweet potato lengthwise into ½ centimetre slices.
  2. Place in the toaster and cook for about 5 minutes, or until browned and softened.
  3. Sprinkle with some fresh herbs and serve with eggs of choice.
